Whisk together the dry ingredients (flour, salt, baking soda, cocoa). Put to the side.
To make the dough, cream the butter, brown sugar, white sugar, and 2 3/8 oz peanut butter together until light and fluffy. Add the vanilla and the egg. Stir in the dry mix just until incorporated.
To make the filling, beat together the 7 1/8 oz creamy peanut butter and the confectioner's sugar until smooth.
Roll the chocolate dough into approximately tablespoon-sized balls. Make an indentation into the dough. Roll the filling into approximately teaspoon-sized balls. Place a ball of filling into the indentation of a ball of dough, and wrap the dough around the filling.
Dip the top of the dough into granulated sugar and arrange on a cookie sheet. Gently press them with the greased bottom of a drinking glass.
Bake for 7-9 minutes at 375 F.
