Suggest a better description(Makes 2 1/2 Cups) If your New Years resolutions included an effort to eat better in 1999, we hope youve been enjoying the month of January at Recipe-a-Day. The Cook & Kitchen Staff are finishing up 31 days of Recipe-a-Day~Light, as recipes from members begin tomorrow. Today, were going to learn to snack a little better by making smart substitutions to reduce calories and extra fat. Youll find this smooth and creamy pudding makes a great dessert or snack, and it contains only about 205 calories with 6 grams of fat per serving. (Remember, the old-fashioned recipe contained about 375 calories per serving with 20 grams of fat!) In a heavy saucepan over medium-low heat, whisk together egg, condensed milk, cocoa, cornstarch, and salt until smooth. Slowly add the milk and bring the mixture to a boil, making sure to whisk constantly until the mixture has thickened, about 10 minutes. Remove the mixture from the heat source and add the chocolate and vanilla extract. Whisk the pudding until the chocolate has melted. Transfer to a bowl and place plastic wrap directly on top of the pudding. Refrigerate until ready to serve.
