Suggest a better descriptionBring cream to the boil in a saucepan and on low heat, mix in chocolate until just melted. Remove from heat and whisk in butter. Beat egg yolks and sugar until creamy. Combine chocolate mixture with egg yolk and sugar. Add a pinch of cream of tartar to egg whites and beat until stiff. Fold a little of the beated egg whites into the chocolate mixture, then using a rubber spatula, gently fold in remaining whites. Fill souffl? moulds to the riim and gently flatten the top, using the spatula. Place moulds on a baking tray and place in preheated oven. After 5 minutes, increase temperature to 200?C/400F. The cooking time may vary from 12 to 18 minutes depending on the size of the moulds. When cooked, remove souffl?s from oven, dust with icing sugar and serve immediately.
