Great Christmas treat
Pre heat the oven to 300. Line a pan with parchment paper and set aside. Combine flour, chocolate chips, walnuts, cocoa, baking powder, cloves and salt and mix thoroughly, set aside. In a mixing bowl add 3/4 cup of sugar, eggs and vanilla. Beat on high speed about 10 minutes or until very light and thick. Fold in the flour mixture into egg mixture until well blended. Shape dough on parchment paper and sprinkle with remaining sugar. Bake 30-35 minutes or until firm to the touch. Remove from oven and let cool completely (about an hour)
Return the oven temperature to 300, slice the logs on a diagonal into 1/4 inch thick sliced. Place slices cut side down, on the bar pan and bake 25- 30 minutes or until lightly browned, remove and let cool completely.
Variation - Omit the cocoa powder, ground cloves and chocolate chips. Increase the flour to 1 1/2 cups and use almonds for walnuts. Substitute almond extract for the vanilla.
You can also substitute pecans for nuts and use zest from lemon and orange to the egg mixture instead of the extracts.
