My favorite cake to make, other than the one time I burnt it (because my Mum's oven is crazy), it has never failed me
Preheat oven to 180°(C) or 350 (F)
Grease two cake tins
Beat sugar and butter until light and fluffy, you are looking for a butter cream consistency
Add eggs one by one, beating well - don't worry if it separates slightly, just keep beating, it'll come back together with the flour
Sift in the flour, cocoa and baking powder, mix in carefully with a metal spoon
Add the vanilla extract
Split the cake mix between the tins
Cook for 25-30 minutes, check its cooked with a skewer, if it comes out clean your done
Leave to cool, then fill and enjoy!
