Layered chocolate strawberry pie, glutenfree, dairy free
Bottom
Mix ingredients rapidly to firm dough.
Let it rest for 15 minutes in refrigerator.
Bake in high baking tray for 15 - 20 minutes
Let cool down and line baking tray rim with baking paper.
Chocolate layer
Melt the chocolate together with the wine or sherry (microwave or au Bain Marie)
Stir until good mixed.
After cooling down a little, mix in the egg yolks one by one and the zest ( zest is optional)
Beat the egg whites together with the salt in a degreased bowl until very stiff.
Fold beaten egg whites into chocolate yolk mixture.
Pour on the cooled down bottom and place in fridge.
Strawberry layer
Cleaned and purée strawberries.
Heat half of the volume with lemon juice. Mix granulated sugarin other half.
Soften gelatin sheets in cold water and dissolve in heated purée.
Beat egg whites until very stiff (peaks).
Mix cold and warm purée and fold in beaten egg whites.
Poor on top of chocolate layer and place few hours in fridge to settle.
Decorate with Dutch cocoa powder and some strawberries.
Cut with hot knife and make sure small piece is left for yourself.
