Moist and delicious
mix all dry ingredients together in a bowl and set aside. Shred the zucchini and squeeze out liquid and set aside. Add the apple cider vinegar to the plant milk and set aside to curdle. In a food processor, add the banana, sugar, vanilla. Add the dry ingredients and pulse. Then add the oil and plant milk, alternating until it is gone. Fold in the zucchini and chocolate chips. Bake at 350 for 25-30 minutes. Check for doneness.
