Great way to use those big garden zucchinis . . . and because it is vegetable - it has to be good for you - right?
Combine the 1st 5 ingredients in a bowl and set aside.
Beat toghter the oil and sugar. Add the eggs - 1 at a time. Stir in the vanilla and zucchini.
Alternating - stir in flour mixture and milk. Add nuts.
Bake in well greased loaf pans or bundt pan at 350 degree for 1 hour or until tests done. (less 45 minutes in load pans)
I sometimes frost with browned butter frosting - but is great without it.
