Sift dry ingredients together in bowl. Beat eggs. Add wet ingredients to eggs and mix well. Add wet mixture to dry ingredients, mixing just to combine. Add nuts if desired. Fill muffin tins about 3/4 full. Bake at 400 degrees for 20-25 minutes or until wooden pick inserted comes out dry.
