This is my favorite recipe.
Garbanzo beans, Tomatoes, Onion mix on Potato Pea cakes with Sweet Chutney sauce, Yogurt and Red Onions.
*** Chutney Sauce ***
First things first, you need to make up that sweet chutney sauce
In a medium sauce pan
Bring water to boil, stir in tamarind concentrate, then jaggery, stir completely
Add Chutney spices (Cup C), lower heat and simmer for 20 minutes
Let cool for 15 minutes and set aside
This will make enough for 4-5 dinners, put most in jars and refrigerate, it keeps about a month
*** Aloo Tiki (potato patties) ***
Now you need to mix up the patties for the Aloo Tiki
Chop boiled potato into squares, soak bread in water, squeeze out water and add to bowl
Add Cup B spices (cumin powder, coriander powder, chaat masala, ginger powder, green chilis, red chili powder, mango powder
Add Cup of Frozen Peas
Mash and then form into small balls about 1" in diameter
Put onto tray, push down balls with fork
Bake at 400 for 20 minutes
** CHOLE (main garbanzo bean element) ***
Saucepan with medium heat
Add 1 TableSpoon oil
Once hot, add 1 tsp Cumin Seeds
Once sputtering, add 1 medium Onion, Saute til golden brown
Add Ginger Garlic paste, Saute till raw smell is gone
Add spices Cupe A (Asfoetida, Coriander, Tumeric, Red Chili, Garam Masala, Anardana), Sautee 1 min
Add Tomato Puree, Cook for 3/4 min till it leaves edge
Add chickpeas to cooked masala, Add 1 cup water, put on lid and let it boil
Once boiling, turn down heat to simmer, cook 8 min
** PLATE AND FINISH ***
Plate a few Aloo Tiki patties in a bowl, pour a cup of Chole on them, now pour a few tablespoons of the Sweet Chutney sauce on top, add tablespoon of yogurt and red onion and serve!
