Chopped Chicken Salad from Miami
Preheat oven to 350 degrees
Bake chicken brushed lightly with olive oil in oven for about 30 minutes until juices run clear
Chop lettuce, tomato and chicken roughly
For Dressing
Mix equal parts Dijon and mayo with lime juice until consistency of salad dressing
Add curry powder to taste
Top rice with lettuce, tomatoes, chicken and toss with salad dressing
Serves 4
