Here's an uber easy and time-tested flavor combination that you can put together in <30 minutes.

For polenta:
1. In a pot, mix together 1/2 cup polenta and 1 1/4 cups of broth
2. Start cooking on a medium high heat, stirring often.
3. After ~12 minutes of cooking polenta, mix in the vegetables. Cover and leave on low for ~3 minutes or until the vegetables are cooked.
4. Once polenta is cooked to your preference, turn the heat off and give it a good whisk to loosen any lumps.
5. Add in cream/ half and half.
For chorizo & scallops:
1. Fry chorizo; set aside on a plate and soak up grease
2. Start searing the scallops, about 1 minute on each side
3. Add back the chorizo, white wine vinegar and water
Put chorizo and scallops over polenta and serve.
