Combine vinegar, sugar, and spices; simmer 10 minutes. Add vegetables; simmer 10 minutes. Bring to boiling. Carefully ladle hot relish into hot jars, leaving 1/4-inch headspace. Adjust caps. Process 10 minutes in a boiling water bath canner.
