Marinate meat with 1 tbsp water or wine, 1 tbsp soy sauce, pepper and sugar for 10-30 minutes.
Combine broth with 1 tbsp soy sauce and oyster sauce and set aside.
Beat the egg and cook until scrambled. Set aside.
Add oil to pan and stir fry meat until cooked. Add all the vegetables and stir fry 3 minutes. Add broth mixture and bring to a boil for a few minutes. Add chow mein noodles and scrambled egg. Stir fry until most of the broth is absorbed.
