This recipe makes a smaller cake
Place first nine ingredients into a large saucepan, bring to a boil, boil 10 minutes.
Remove from heat, cool slightly.
Beat in eggs, then flours and salt. Mix well
Spoon mixture into a greased and lined deep 200mm cake pan.
Double-wrap pan with brown paper to prevent from burning, tie with string.
Bake at 140 degrees celcius 1 ½ - 2 hours or until skewer inserted into center comes out clean.
Remove from oven, pour brandy/sherry over, cover top of cake with foil, leave on wire cooking rack in cake pan until cool.
Turn out, wrap in foil.
Store in airtight tin or freeze.
Make up one month before required.
