Drop the unpeeled potatoes into a pan of boiling water and cook 15 to 20 minutes. Melt the sugar in a 10-12 inch skillet over low heat. cook 3-5 minuets of or until the sugar turns a caramel brown. Stir consistently with a wooden spoon. The sugar must not become to dark or it will be bitter. stir in the melted butter and add as meany potatoes as possible without crowding the pan. Shake the pan constantly. Remove the hot caramelized potatoes when they are coated, and repeat the processes until all the potatoes are coated.
