1. Heat the oil in a large saucepan and cook the chopped onion, carrot and celeriac over a medium heat for 5 minutes.
2. Add the chestnuts, 1.2 litres of vegetable stock, cinnamon and potato.
3. Bring to the boil, then reduce heat, cover and simmer for 25-30 minutes until the vegetables are tender.
4. When the soup is cool enough, purée in a liquidiser(in batches if necessary) and season to taste.
4. Reheat the soup and serve in warmed soup bowl stopped with crumbled cubes of Stilton and parsley leaves.
