In large glass bowl, mix fruits and bourbon. Cover and soak for twelve hours.
Preheat oven to 300 degrees. Grease three 8x4 loaf pans, or several smaller loaf pans.
Beat butter, sugar, baking powder, salt and spice . Add eggs and corn syrup and beat until well blended. Add flour and and beat until smooth, then beat in milk. Stir in all of the fruit mixture and pecans. Spoon into greased loaf pans. Bake at 300 degrees until cake is evenly browned and a toothpick inserted in the middle comes out clean. Depending upon pan size, this could take 50-75 minutes. Cool and remove from pans. Brush lightly with bourbon, wrap tightly and store in refrigerator.
