Defrost, drain and squeeze dry the spinach. Saute onions in 1/4 cup butter until translucent. Add garlic and continue for 1 minute. Mix softened cream cheese with egg and parmesan. Add salt, pepper and nutmeg.
Add onions and spinach and stir thoroughly. Place in greased casserole dish(9x9) or 1 1/2 quart gratin dish)
Mix stuffing mix or breadcrumbs with melted butter, top casserole and bake for 25-30 minutes.
Optional Fried Onion topping instead of breadcrumbs or stuffing.
Thinly slice 1 large onion. and pat slices dry. Heat 1 cup oil in pan. add onions and fry , stirring frequently until golden and crispy - about 20-30 minutes. Top casserole and bake as directed.
