2. Soften the onion in a little butter and sunflower oil until they are translucent. Add the apricots
3. Add the sage, salt and pepper and breadcrumbs then mix in the egg. Leave to cool, de skin the sausages and mix through the crumb mix.
4. Roll into little balls and pan fry until a little golden then pop into the oven and cook for 15-20mins.
