A creamy, creamy delight!
Heat oven to 375.
Cook pasta about 1 minute less than package instructions. Drain and rinse under cold water to stop cooking. Set aside.
Chop bacon and fry until crispy. Save 3 tablespoons fat in pan. Drain bacon on paper towels.
Put bacon drippings in large saucepan over medium heat. Add garlic and cook for 1 minute. Add flour and cook for 2 minutes. Warm milk and then add to roux. Bring to a slight boil so thickens. Add white and cayenne pepper, nutmeg, and Tabasco . Adjust seasoning to taste. Reduce heat to medium-low. Start adding cheese slowly and mix. Continue until all cheese has been added.
Mix bacon, cooked pasta, and cheese sauce in a large mixing bowl. You may want to leave out some of the noodles to make sauce-noodle ratio better. Put in large casserole dish. Leave plenty of space as sauce/noodles will expand when baked. Top with light layer of breadcrumbs. Bake for 20-25 minutes or until nice golden brown crust on top.
Adjust Tobasco and cayenne to taste.
