Chop the beets into quarters, and place in a saucepan full of water. Boil rapidly until beets are soft.
Remove beets from hot water, and place in cold water until cool. This should allow you to remove the skin with ease, if desired.
Place beets and all other ingredients into food processor (or small bowl if using a stick blender) and pulse until beets have broken down and all ingredients are combined.
