This soup can be made with any vegetables you have on hand.
Heat oil in a large Dutch oven over medium -high heat. Add onion and garlic; saute 5 minutes or until tender. Add water and next 9 ingredients; bring to a boil. Cover, reduce heat and simmer for 20 minutes. Increase heat to medium-high; simmer uncovered for 10 minutes. Add orzo and cook uncovered for an additional 10 minutes. Laddle soup into bowls and sprinkle with cheese.
Not recommended for freezing.
