Suggest a better description1. Preheat oven to 400 degrees
2. Optionally trim any excess skin & fat off of chicken pieces
3. Add chicken pieces to a large bowl, and add enough olive oil to lightly coat chicken when mixed. Also add the zest and juice of one lemon, along with any fresh or dried herbs. Also add salt and pepper.
4. Toss chicken pieces thoroughly to coat with olive oil and seasonings.
5. Arrange chicken pieces on a baking sheet / pyrex dish / roasting pan. Ensure that the chicken pieces are well spread out so they can roast evenly and properly. Chicken pieces should not be touching.
6. Roast until the skin is crisp and brown, and the meat internal temperature reaches at least 170 degrees, about 40 minutes. Serve chicken immediately.
