Cook red onion and apple in a Dutch oven in a little oil until softened, about 5 minutes.
Add cabbage, apple cider, red wine vinegar and 1/2 teaspoon kosher salt. Simmer, stirring occasionally,
until cabbage is tender, 30 minutes.
