Houchens and Tabor thanksgiving meal modified from Williams and Sonoma
In a saucepan over medium-high heat, melt the butter.
Add the shallots and thyme and saute until the shallots are golden brown, about 8 minutes.
Add the flour and cook, stirring frequently, until browned, about 5 minutes.
Add enough stock to the pan juices to measure 5 cups.
Gradually whisk the stock mixture into the butter mixture.
Bring to a boil, whisking frequently.
Mix in the Cider syrup and boil until thickened, about 10 minutes. (could boil your own cider syrup down from cider, use 1 1/2 cups cider and boil down to 1/2 cup).
Mix in the Calvados or other brandy and return to a boil.
Season with salt and pepper.
I have routinely down the gravy completely without waiting for the pan juices and set it aside and reheated and added the pan juices at the last minute. Work fine.
Not much extra - would want to double this for more than 8 people - never enough of this great gravy.
