Suggest a better description-Bring quinoa and water to a boil in saucepan then reduce to a md-low and cover until water is absorbed and quinoa is tender-about 10-15 minutes. Set aside to cool.
- Whisk lime juice(save some to put directly on avocado), oil, cumin, salt, and red pepper flakes in a bowl.
-Combine quinoa, tomatoes, black beans, and green onions into a bowl.
-Pour dressing over quinoa mixture; toss to coat.
-Stir in cilantro and avocado (make sure the avocado is coated in lime juice to not get brown) and let sit over night in the refrigerator.
