Combine water, yeast, and sugar. Stir until dissolved. Set aside in warm, draft free, place for 10 minutes (until proofed).
Combine pudding and milk and stir until thickened. Add butter, eggs, and salt and mix will. Combine with yeast mixture and add to bowl of flour. Knead until smooth.* Remove from bowl, grease it, and then add it back. Flip the dough, cover, and let rise in a warm, draft free, place until doubled (1 hour).
Mix your butter, brown sugar, and cinnamon together.
Half your dough. Roll out your dough on a floured surface until 25x15 inches.* Spread half your mixture over top and roll up very tightly, starting from the 15 inch short edge. Put a knife mark every 1 1/2 inches and cut with dental floss. Repeat.
Place in greased pan 1 inch apart. Cover and let rise until double (1 hour).
Bake at 350F for 15-20 minutes, until slightly golden.* Remove from oven, cool in pan for 5 minutes, and transfer to wire rack to cool completely.
Cream cream cheese, butter, vanilla, sugar, and milk until light and fluffy. Frost the cooled rolls.
Sometimes I skip the cream cheese frosting and make saucey cinnamon buns instead.
Melt butter, brown sugar, and corn syrup in a saucepan until dissolved. Boil for 1-2 minutes. Add to the bottom of the pan, before the buns.
Do not over flour! Your dough should be soft and barely sticky.
Do not over bake!
