Suggest a better descriptionIn a large bowl, combine chilled water, whole eggs, bread flour, all-purpose flour, milk powder, salt, shortening, sugar, yellow food coloring, and yeast. Mix with dough hooks until well incorporated. Do not over mix.
Roll butter between 2 sheets of wax paper to 24” x 17” rectangle; turn over for even rolling and lift top sheet frequently to remove wrinkles. Chill.
On a floured surface with floured rolling pin, roll dough into 36” x 18” rectangle. Remove top sheet of paper from butter; invert over dough, leaving 1/2” margin on 3 sides. Remove other sheet.
Fold unbuttered 1/3 of dough over middle 1/3; fold opposite end over middle to make 12” x 18” rectangle.
With a rolling pin, press dough together around edges to seal in the butter. Roll dough to 36” x 18” rectangle. Fold rectangle crosswise into thirds to make 12” x 18” rectangle. Wrap in plastic wrap and chill for 30 minutes.
Repeat the last step (roll, fold, wrap, and chill) two more times.
Dough will keep 3 days in a refrigerator. Allow dough to ferment in refrigerator for a minimum of 24 hours before assembling danishes or coffee cakes.
Butterscotch Roll Icing:
Combine water and starch in a saucepan and mix until all is incorporated. Add granulated sugar and corn syrup to the saucepan and boil for 1 1/2 minutes. Add vegetable oil after contents are boiling and stir well. Add brown sugar and bring to a boil again.
Put powdered sugar in a mixing bowl. Add saucepan mixture to mixing bowl, a little at a time, while mixing at low speed. Keep adding contents until icing is to the consistency you desire. Makes enough to ice 4-5 coffee cakes or 2 1/2 dozen danishes.
Butter Streusel:
Combine margarine, sugar, honey, vanilla, and salt in a large bowl and mix well. Add flour and mix to a damp crumble.
Cinnamon Butter Filling:
Mix butter in a large bowl until soft. Add sugar, graham crackers and cinnamon to the bowl and mix until smooth. Add egg white and mix on low until all the ingredients are incorporated. Add water and mix on medium speed until the mix appears smooth.
TO ASSEMBLE DANISHES
Prepare scratch danish dough. Preheat oven to 350 degrees.
Place the prepared danish dough onto a well floured surface. Roll the dough into a rectangle that is 1/2 inch thick. Make the rectangle 10 x 12 inches.
Spread the cinnamon butter filling and butter streusel on 2/3 of the dough piece. Once the filling is spread, fold the dough piece into thirds folding the side without the filling first.
Cut folded piece into 1 inch wide pieces.
Place the prepared danishes directly next to each other on a parchment paper lined cookie sheet. Cover with a damp towel ad let rise in a warm place until it has doubled, about 45 minutes. Dough is doubled when one finger pressed into dough leaves a dent. Place into the oven and bake for 15 minutes or until golden brown. Let cool on pan. Once it has cooled then cover the entire danish with warm butterscotch roll icing.
