Combine sugar, syrup and hot water in heavy 3 quart pot. Use a wooden spoon. Cook on medium to high heat to 300 degrees (candy thermometer). Remove from heat. Add cinnamon oil and food coloring. It will start to smoke. Try not to get too close. Stir Well. Pour hot candy out on large cookie sheet lined with foil. Score candy as soon as possible. Break when cool.
