Combine all ingredients and mix well with your hands. Divide dough into half. Roll out each half on a cinnamon-dusted surface. If the dough shows signs of cracks when rolled out, add more applesauce, 1 tablespoon at a time. Roll to 1/4 inch thickness and cut with your favorite holiday cookie cutters. Punch a hole in the top of each to insert a ribbon for hanging. Let dry on cookie sheets or wire race 5-7 days, turning every day.
