A simple and delicious twist on a classic Strawberry Shortcake recipe.
1. Place sliced peaches, ground cinnamon, and 1/4 c. of the sugar in a small saucepan. Allow to sit for a few minutes while preparing shortcake.
2. Preheat oven to 450°F. Grease an 8” round cake pan.
3. In a large bowl, stir together remaining 1/4 c. of sugar, flour, and baking powder. Cut in butter until mixture resembles coarse crumbs.
4. Combine the beaten egg with the milk, and then add all at once to the dry mixture. Stir just to moisten.
5. Spread batter in prepared 8” round pan. Bake 15 – 18 minutes, until a toothpick inserted near the middle comes out clean. Allow to cool for 10 minutes in pan.
6. While shortcake is baking, heat sugared peaches over low heat, stirring occasionally. Cook until the syrup begins to thicken slightly.
7. Whip the cream, adding 1 tsp. of vanilla sugar for flavor, if desired.
8. After shortcake is cooled slightly, remove from pan. Split cake into two layers.
9. Spread half of the peaches and half of the whipped cream on the first layer. Top with second layer. Spread the remaining peaches and whipped cream on top of the second layer.
