Healthy San Francisco style oatcakes. Perfect low fat breakfast or snack for people on the go or anyone who loves oatmeal cookies.
Preheat the oven to 325 F.
With a food processor:
Combine oats, flours, baking powder, salt, and cinnamon in a food processor. Pulse several times to chop oats into small pieces and to blend dry ingredients. Add raisins to the food processor mix and pulse a few times to chop them as well. Pour into a large bowl and set aside.
Without a food processor:
Combine quick cooking oats, flours, baking powder, salt, and cinnamon, and chopped raisins in a large bowl, mix, and set aside.
In a small bowl, whisk the egg white until it is very frothy (about 1 minute by hand). Set aside.
Mix the remaining wet ingredients (yogurt, honey, and vanilla). Fold the egg white into the wet ingredients.
Add the wet ingredients to the dry ingredients and mix by hand until the dough comes together enough for you to form hockey-puck sized patties. If the dough is too crumbly to hold its shape, add just enough yogurt to make it stick together. Note: it will be dry, not sticky, but should hold its shape if you squeeze it.
Form into 9 hockey-puck sized "cakes" and place on a cookie sheet. Bake at 325 F for about 15 minutes. Delicious hot or room temperature. Easy to store or freeze.
Add a latte and you've got the perfect breakfast on the go!

Do not over mix the dough or over bake it.
