Whisk together buttermilk, cream cheese, maple syrup, egg, and vanilla. Fold buttermilk mixture into dry ingredients just until moistened. Let batter rest 10 minutes.
Heat a griddle or non-stick skillet over medium-low heat. Brush with oil. Pour about 1/3 cup batter onto the griddle.
Cook until bubbles form , 2-3 minutes, flip and cook until golden.
