This spice cake is a favorite from my childhood. It is so good, you don't even have to have icing. I remember when I was young, my mom would get so mad when she made this. Because, my older brother and little sister would run through the kitchen and look in the oven, slamming the oven door just as it was starting to rise and bake. Sometimes, it would make it fall and come out the consistency of brownies. After a while, she just gave up getting mad, LOL. We never let it go to waste anyway!
Pre-heat the oven to 350 degrees.
In a large mixing bowl, combine all the dry ingredients; mix well. Add the shortening, cutting it in with a pastry blender or fork. Add the remaining ingredients, mix well.
Grease and flour a 9"x13" baking pan. Pour the batter into the pan. Bake for 30 - 40 minutes, or until inserting a toothpick in the center comes out clean.
We would serve this with Ready Whip, Cool Whip, or sometimes a vanilla icing.
