Cinnamon Swirl Banana Cake
Preheat oven to 350. Spray 8x8 glass pan with coconut oil.
In a mixing bowl smash the 3 bananas. Add everything down to swirl mix. Mix well. Set aside.
Swirl mix.
In a separate bowl, smash the one banana, add the honey and cinnamon. Mix well by hand.
Spread the cake batter in the pan. Drop the swirl mix on top by tablespoons. Use a butter knife to swirl into cake batter. Bake the cake for about 30 minutes.
As soon as the cake is in the oven make the nut topping.
Add the maple syrup to a dry skillet, add the chopped walnuts. Cook and stir until nuts are toasted and syrup is caramelized, about 5 minutes. Remove to parchment paper to cool. With about 15 minutes to go on the cake, take it out of the oven and sprinkle the nuts on top. Continue baking until done, about another 15-17 minutes.
