This is an easy banana cake that uses up ripe banana and will disappear quick!
Heat oven to 350(F). Grease the bottom of a 9X13 cake pan and set aside. In a stand mixer, add the oil and sugar and mix to combine. With the paddle going add in the eggs and banana and mix until smooth. (a few small banana bumps will remain and that is good!). Mix in the vanilla, cinnamon, salt, baking soda, baking powder and flour and mix thoroughly. Pour batter into the cake pan. Sprinkle the brown sugar and cinnamon chips evenly over the top. Bake in hot oven for 40 minutes or until the center springs back when gently pressed.
