Suggest a better descriptionCombine yams, milk and orange rind; blend well. Add yam mixture to muffin mix and mix only until ingredients are combined. Fill greased 2-inch muffin pans 1/2 to 2/3 full. Combine cinnamon and sugar; mix well. Sprinkle over batter. Bake in hot oven (400 degrees) 20 to 25 minutes, or until done. NOTES : This booklet was prepared by the Louisiana Sweet Potato Commission.
