First off, I don't make my own Cioppino sauce from scratch. I usually buy what's available at the grocery store. However, many of them are spicier than our crowd likes, so I mix the sauce with canned tomato sauce and canned chopped tomatoes until you have enough sauce to cover all fish.
Put sauce, chopped tomates and tomato sauce in a LARGE pot and bring to a boil, stirring to keep from scorching. I usually reserve some of each to judge the quantity needed later. Reduce to medium high heat and let this simmer for at least 20 minutes. It's important to cooked the canned tomatoes to eliminate the "metallic" taste from canned. Break crab into small pieces and add to pot and stir, return to low boil. The fish is added in layers so that it's not overcooked. Each time you add fish, it will cool the pot. bring back to a boil. Generally I add raw prawns next. While it's cooking, I scrub clams and parboil them in a pot of water, as they open, I add them to main pot with a slotted spoon. I do this to prevent sand in the main pot and also to avoid a bad clam ruining the whole pot. If a clam doesn't open, throw it out.
Lastly add cubed fish and cook just long enough for fish to be done. If the quantity of fish is too much, then add some of the reserved sauce and tomatoes as needed.
Serve immediately with grated Parmesan and garlic bread!
