A dressing that also serves as a sauce! Easily made in an Omega Blender or Vitamix.
In order listed, put all ingredients except olive oil into Blender. Process on Pulse for 20 seconds while raising speed to highest level. Then, while blender is on continuous, and starting at lowest speed, add the olive oil in a steady stream, gradually raising the speed to the highest level and blend for 30 seconds to fully emulsify.
This will fill a quart jar when done. The recipe is more of a guideline than an order. It's also very versatile ... I've used it to poach fish, brighten up roasted chicken as well as dress salads. More olive oil can also be added.
