Add oil, onion, and shallots in pot on medium heat for 15min (until onions brown)
Then add a layer of potatoes, salt, pepper, garlic, wine and water. Bring to boil for 15 min.
Add a layer of the corn, chorizo, and clams. cook 6 minutes
Add muscles and shrimp. Cook 4-8 minutes (until muscles and clams open and shrimp is red)
Strain and keep broth for dipping.
For seasoning to put over it all:
Zest the lemon and microwave that for 1min on high. Mix with thyme, salt, and chili powder. Shake over top of everything.
