Whisk eggs until slightly foamy. Add milk and butter, and whisk together until foamy.
Add flour and salt, whisk together just until mixed (may be a little lumpy). Allow batter to rest for 1 hour if possible.
Preheat oven to 425 degrees.
Spray popover pan with canola oil and place onto cookie sheet or pizza stone. Preheat pan in oven for 5-10 minutes.
Remove hot pan from oven and immediately pour batter into cups. Filling about 3/4 full.
Return to oven and cook for 20 minutes. Reduce heat to 350 degrees and continue cooking 10-15 minutes until golden brown. DO NOT OPEN OVEN DURING ANY OF COOKING TIME.
Remove from pan and serve immediately.
If not serving immediately, use a paring knife to slit the side of popover, so it does not collapse.
