In large mixer bowl, combine yeast, 1 cup flour and salt. Add water and oil; beat at low speed of electric mixer for ½ min, scraping sides of bowl. Beat 3 min at high speed. By hand, stir in enough of remaining flour to make a stiff dough. Knead til smooth, 8-10 min. Place in greased bowl, turning once to grease surface. Cover and let rise til more than double, about 1 ½ hrs. Punch down; cover and chill til cold, about 2 hrs. Cut dough in half. On floured surface, roll each half to 12” circle about 1/8” thick. Place in 2 greased 12” pizza pans; crimp edges.
