2. Boil potatoes until done, 20 minutes or maybe much longer depending on size. Remove to cutting board to cool.
3. Chop celery and shallot.
4. Make dressing.
5. Peel? and cube cooled, cooked potatoes.
6. Mix all ingredients. Salt and pepper to taste. Chill for at least 4 hours before serving.
