Firstly sift the flour into a big enough bowl. Then add the butter, make sure that it is room temp. Work them both until they have become FINE BREADCRUMBS. It's best to use your fingertips for this part as cutlery doesn't really have a effect on it.
Once it's breadcrumbs, add in the sugar and give it a mix with your fingers again then add in your desired vanilla. Careful not to add too much in otherwise it would ruin the flavour but it would have a nice aroma. Give it a whisk again with a spoon. Then use your fingers again to form a nice firm dough.
Once it has completely formed to a dough, then lay it out on a clean work bench. Don't handle it too much by kneading it.
Try to keep it as much to 2 - 3 cm thick as possible.
Try to keep it in a shape of a rectangle/ square because it would make it easier to cut, if you decide to cut it into fingers. It not fingers then roll it and cut out different shapes with cookie cutters as I sometimes do.
Place them, on greased baking tray or alternately on a tray with baking parchment.
Place it in the oven for approximately 10 - 12 mins or until they have cooked.
IMPORTANT MESSAGE: To make sure that they don't have a burnt flavour and aroma when eaten, the shortbread should be the same colour when they come out to when they went in. If it does happen to catch the sides of some biscuits trim off the darker bits so the it is more presentable.
