Chop up all of the veggies, then mix them together in a bowl. Next whisk the 3 eggs with the 2 cups of egg whites in another bowl.
Line your muffin tins/cups with cupcake liners and spray with cooking spray.
Fill the cups with a Tbsp. of the egg mixture. Next fill the cups with the veggies. Then fill to the top with the rest of the egg mixture.
Pop them into the oven at 375° For about 20-30 minutes or until you see that they are firm on the top.
