Cliff's BBQ Chicken
- Trim chicken thighs of excess skin and fat
- Put chicken in a large mixing bowl
- Squeeze lemon and lime juice over chicken
- Add everything else and mix well
- Clean bbq and start coals. Should take about 30 minutes, which is enough time to marinate chicken
- Put chicken on the grill skin side up and cover grill. Check in 7 minutes if browned and flip the chicken and cover. Skin side could burn quickly so check in 5 minutes. Continue cooking until skin is nicely browned. Flip back to skin side up. There are always hot and cold spots so adjust the location of the chicken accordingly. The coals should have cooled somewhat, continue cooking until done about 15-20 minutes.
