Large batch
1. Mix cocoa, salt and sugar together. Add the water mix until smooth. Cook together for about 5 minutes.
2. Scald milk. Add cocoa mixture to scalded milk. Stir until well blended. Cook in double boiler 10 to 15 minutes to develop flavor. Beat to a froth with whip to prevent scum forming on top.
3. Just before serving add vanilla. A dash of cinnamon may be added for flavor, if desired.
