Beat eggs and sugar well. Add oil and flavoring; blend well. Sift together flour, salt, soda and baking powder. Mix alternately dry ingredients and buttermilk into egg mixture. Fold in coconut and nuts. Flour and grease 2 loaf pans and pour in batter. Bake at 325 degrees for 70-75 minutes. In pans, poke cake with fork and cover with glaze. Let sit 4 hours.
Glaze:
1 Cup sugar
1/2 Cup water
2 tsp. butter
1 tsp. coconut flavoring
Boil sugar, water, and butter for 5 minutes. Remove from heat and add flavoring. Pour hot syrup over warm bread. Let stand 4 hours before removing from pan.
