On medium speed, beat butter, sugar, oragne peel and vanilla until smooth. Beat in egg until well blended.
Add dry ingredients to butter mixture, stir to mix, then beat on low speed until dough comes together, about minutes. Mix in dried fruit and coconut. Shape into 1" balls and place about 2" apart on a baking sheet. Cook in 350 degree oven just until they begin to brown, 11 - 15 minutes. Shorter baking time will yield a chewier cookie, longer baking time will yield a crispier cookie.
Let cookies cool on sheets 5 minutes before lifting off to put on cooling rack
